It tends to hold onto its acidity longer and reaches phenolic (flavor) ripeness at lower sugar levels than Grenache Noir. What all this nerd-speak really means is that it’s a bit easier to make a well-balanced wine from this biotype. His wines quickly became favorites among the cool natural wine bars, and while I [Chris] can  be cool, I’m not always into the natty stuff [unlike Jess 😂]. As Brendan’s winemaking has evolved, though, we’ve both found ourselves appreciating these wines more and more.\nWith Chai de la Dive, Brendan teamed up with Camille Guiberteau and Alex Crochet to source fruit from trusted growers and create something a little more approachable in its youth — and much easier on the wallet. This rosé comes from several Cabernet Franc vineyards, quickly macerated and fermented in stainless steel with native yeast.\nIt captures one of the things I love most about rosé: it tastes like itself.
