Mickaël Marillier, who leads the estate today, is a fountain of dynamic energy — his team calls him “Mr. Yes” because, in his mind, anything is possible and he’s always willing to try something new. Hérrison was Communal Brands’ first foray into premium bag-in-box wine. The company, founded by Master of Wine Melissa Saunders, is rooted in a focus on sustainability and alternative packaging, and this project grew directly out of that ethos.\nFresh and unapologetically easygoing, passe-tout-grain is a nod to Burgundian history, when Gamay was widely planted alongside Pinot Noir before being pushed south toward Beaujolais. Hand harvest. Fully destemmed and then allowed to macerate for one week. Fermentation takes place in a temperature controlled stainless steel tank over a period of 7 days with one punch down per day. The juice is then racked into a cement tank and allowed to rest for 5 months. Lightly fined..
