This isn’t your typical Champagne story, but rather one built on pure curiosity and dedication. Benoît Doussot, originally from Burgundy, set out to explore the overlooked southern reaches of Champagne — the Côte des Bars — sourcing from growers farming sites he believed in and naming his project Clandestin for those “hidden gem” vineyards. This Boréal bottling is 100% Pinot Noir from north-facing, clay-limestone sites — an unconventional choice in a region where ripeness is often chased from sunnier exposures. Even more striking, it’s bottled as a Brut Nature, with no dosage to soften or round things out. Not the typical approach but definitely a stunningly delicious one!

Vinification: Vineyards farmed naturally - no herbicides or synthetic fertilizers used. Direct press, then racked into barrels. Indigenous yeast fermentation and one year of ageing in 600L French oak barrels for 12 months. Spends 15 months sur lees followed by 6 months in bottle before release; Dosage 0 g/L; Disgorgement September 2024.
