This comes from northern Slovenia right on the Austrian border, an area I [Chris] have been obsessed with for Sauvignon Blanc for years. The Tement family started Ciringa in 2009 and works a crazy steep hillside by hand, growing nothing but Sauvignon on soils similar to Chablis and Champagne. They give the juice a short skin soak, ferment it slowly in big old local casks, and somehow land on a wine that’s insanely energetic, textured, and focused without tasting oaky at all. Alpine Sauvignon at its absolute best.
