Corte San Pietro 'Sei Bollissima' Brut

Winemaker Fabio is a Barbera specialist - it's pretty much all he grows. Thing is... he is also likes Prosecco, so he decided to make his own! A short maceration and press of Cortese and Barbera, this is like Prosecco but drier and with some plum skin bitterness. It'll mix well into your favorite Prosecco-based cocktail (are we still doing Aperol spritzes y'all?) but it also drinks very well on its own.
