Kobal 'Roots' Sauvignon Blanc

If you haven't yet been subjected to Jess' monolgoue on the deliciousness that is skin macerated Sauvignon Blanc, you're missing out [not really but she can go on and on lol]. When this Sauvy B spends time on skins, it gets a little herbaceous hit and some more structure to balance all its fresh citrusy notes. Think grapefruit margarita with a sprig of thyme.

Vinification: Practicing organic farming (working on certification). Hand harvest; 15 day skin maceration followed by spontaneous fermentation. Aged for 9 months in used French oak, with no fining or filtration, and only minimal sulfur addition used at blending.
