Vinification: Certified Biodynamic. The grapes were picked over two separate picks, then foot tread to soak on the skins overnight before being whole bunch pressed the next morning. Fermented with native yeast in old French oak barrels. Aged on lees for 8 months, then racked for the first time to bottle, without fining or filtration, with minimal sulfur used.
