We’re big fans of Bree and Chad Stock, whose wines are a staple in the shop. Their Concinnitas project (a collaboration with West Seattle folks) has shown up in wine club before, and we've always got at least one Limited Addition selection at any given time. Their Limited Addition label focuses on experimental varieties not typically associated with the Willamette Valley. Think Meunier, Mencía, Trousseau, and here, Aligoté. Traditionally grown in Burgundy, Aligoté has a reputation for high acidity (famously used in a Kir with crème de cassis), but modern farming has softened its edges. Today, it often drinks like a brighter, more electric take on Chardonnay. This bottling features the Doré biotype of Aligoté, which ripens to a golden hue and brings a slightly richer texture with stone fruit notes. It contrasts with the more common Vert (green) clone, which tends to lean more toward apple and citrus.

Vinification: Certified organic & no till. Fermented in neural French oak Burgundy barrels with native yeasts for one year. The barrels are then stirred and transferred to individual stainless-steel drums for an additional year of aging on lees. This allows enough time for the yeast to complete autolysis which releases their proteins and amino acids to the wine deepening the salinity and minerality complexity of the wine.
